Ingredients:
-2 large Honeycrisp Apples or 3 Gala
-2C loosely packed baby or standard arugula
-8oz sharp white cheddar cheese cut into twenty 3x1in slices OR Brie
-1/4C balsamic glaze
-Kosher salt and freshly ground black pepper
Directions:
1. Cut Apples into a total of 20 wedges
2. Layer a few arugula leaves on apple wedges then top with cheese slice; wrap with a strip of prosciutto and place on platter
3. Drizzle the wrapped apples with the balsamic glaze and season to taste. Serve immediatly.Vegetarian

Prep: 15 minutes + Overnight Chilling Cook: 50-60 minutes
Cool: 10 minutes
Ingredients:
-3 tablespoons salted butter
-Lemon zest
-1/2 tsp thyme leaves
-1/2 tsp rosemary leaves
-1/2 tsp ground black pepper
-3 lb whole chicken
-3 thyme sprigs
-2 rosemary sprigs
-2 tsp salt
-2 garlic heads halved
-Extra virgin olive oil
Directions:
1. Mix together butter, lemon zest, thyme leaves, rosemary leaves, and pepper the night before roasting
2. Blot dry the chicken and place it breast side up on a baking sheet. Gently loosen skin and separate from meat. Be careful not to puncture the skin. Place the butter mixture underneath the skin and then pat skin back down on breast. Then rub the rest on top of the meat evenly.
3. Cut the rest of the lemon in half and tuck inside the cavity with the herb sprigs. Sprinkle salt evenly overtop and chill overnight (uncovered).
4. Preheat oven to 450 degrees
5. Brush away any undissolved salt and roast on baking sheet OR on cast iron skillet (this is is my preferred).
6. I like to place an extra lemon (halved) in my skillet to add extra flavor during roasting.
7. Position the chicken so that the breast faces the back of the oven and the legs face forward.
8. Rub garlic halves over the meat with olive oil and then place them cut side down in the skillet around the chicken.
9. Roast for 45 minutes and then spoon pan juices over the chicken.
10. For browned top: Remove from oven and set broiler to high,

A Steel Magnolia's Favorite: Truvy's Cuppa Cuppa Cuppa
Prep: 5 mins Cook: 20 mins
Ingredients:
1C Flour
1C Sugar
1C Fruit Cocktail
Directions: Mix together and bake at 350 degrees "until golden bubbly" (about 20 minutes)
Serve over ice cream "to cut the sweetness" 
Chocolate Chip Zucchini Bread

1Tbsp coconut oil for greasing the pan
2C Oat Flour
1tsp Cinnamon
1/4 tsp nutmeg
2tsp baking powder
Pinch of sea salt
3 Large Ripe Bananas; mashed
1/2 C unsweetened applesauce
1/4 C unsweetened almond milk
1/4 C maple syrup
2 Large Eggs
1 Large zucchini (shredded and excess water squeezed out)
1/2 C chocolate chips
Directions:
Grease a loaf pan with the coconut oil
Combine dry ingredients in a large bowl
Mash up and combine wet ingredients
Combine and dry and wet ingredients, then stir in zucchini and chocolate chips
Bake in loaf pan at 350 degrees for 50-60 minutes
Let it rest for 20 minutes and then serve
