ROAST CHICKEN

Prep: 15 minutes + Overnight Chilling
Cook: 50-60 minutes
Cool: 10 minutes
Ingredients:
1. 3 tablespoons salted butter
2. Lemon zest
3. 1/2 tsp thyme leaves
4. 1/2 tsp rosemary leaves
5. 1/2 tsp ground black pepper
6. 3 lb whole chicken
7. 3 thyme sprigs
8. 2 rosemary sprigs
9. 2 tsp salt
10. 2 garlic heads halved
11. Extra virgin olive oil
